Now, this wasn’t meant to be a Homemade Toffee Recipe – it was meant to be Fudge, but well, something went wrong somewhere and out came some yummy, crunchy toffee. I thought I would share it with you anyway as it is rather delicious! The kids can’t get enough of it!
Prep time: 10 minutes
Cook time: 15 minutes
300ml Milk (I used full fat pasteurised)
350g Caster Sugar
100g Unsalted Butter
1tbsp Natural Vanilla Extract
What You’ll Need:
18cm Square Cake Tin (plus a little oil for greasing!)
Optional – Sugar Thermometer
Grease the Cake Tin.
Put the milk, sugar and butter in to the saucepan and heat slowly, stirring all the time, until the sugar has dissolved and the butter has melted.
Bring to the boil and boil for around 15-20 minutes, stirring continuously. (It is vital to do this as it makes sure that nothing burns!)
When the mixture reached the ‘soft ball’ phase (where the mixture looks and feels really soft – you will know when you get to this stage) – or, if using a Sugar Thermometer, when the temperature reaches 115C, remove from the heat and stir in the Vanilla Extract immediately.
Leave to cool for about 3-5 minutes.
Beat the mixture with a spoon for a few minutes, until the mixture starts to thicken and you see a gloss start to appear.
Pour the mixture in to the prepared tin and leave to set. DO NOT PUT IN THE FRIDGE!!!
Once set, the toffee with be hard, but not overly hard. You can easily break the toffee with your hands. Store in an air tight container.
To give as gifts, you can either pop the broken toffee in to a cute jar, or in to a paper bag. How about making a cute little parcel box, lined with some greaseproof/baking paper?
