Vanilla Clotted Cream Fudge Recipe

Now, this truly is a Vanilla Clotted Cream Fudge Recipe – and a yummy one at that! It’s a gorgeous creamy, buttery, vanilla fudge with a crumbly texture that just melts in your mouth! Simply divine.

Homemade Vanilla Fudge

Prep time: 10 minutes
Cook time: 15 minutes
Makes (approx) 36 pieces

Ingredients: 

275g golden caster sugar
100g light muscovado sugar
225g clotted cream
1tbsp natural vanilla extract

What You’ll Need: 

Large Saucepan
20cm Squared Tin (lightly greased)
Optional – Sugar Thermometer

Instructions: 

Place all the ingredients in a large saucepan  and heat gently, stirring  continuously until all the sugar dissolves.

Bring the mixture to the boil, cover and boil for 3 minutes. Uncover and continue to boil until the mixture reaches a ‘soft ball’ phase, where the ingredients have all come together and are a bit dough like – alternatively, boil until the temperature reaches 116 C on a sugar thermometer.

Remove from the heat and beat until the mixture becomes thick and creamy. You will see it start to turn crumbly as it cools.

Pour into a greased 20 cm square tin straight away.

Leave for around 30 minutes. Mark the fudge into squares with a knife and leave until set.

Once completely cooled, cut the fudge into pieces and store in an airtight container.


TOP TIP:

To give as gifts, wrap each individual square in some baking/greaseproof paper – twisting at the end. You can then pop them either in a little paper bag and tie with a ribbon, or put them in a cute jar.

They make perfect presents to give any time of the year!
